Last week I also went to a mochi-making workshop at Jigsaw Renaissance, which has made clear to me that "workshop" does not always mean the same thing. Here it meant "let's mess about overconfidently with internet recipes we haven't tried before" rather than the "let's learn from someone who knows what they're doing" I was hoping for. Unsurprisingly, we made the worst mochi ever. (Uncooked rice flour, water added was not hot; result should have been used to hang posters.) This was followed by a strange pancake that actually did seem to be decent mochi. (The right amount of water, not "oh, it looks okay now!", plus five minutes in the microwave.) Overall kind of an annoying experience, but I can see it as echoing America's Test Kitchen if I try hard enough.

Hah, I can see them being a little more DIY than you might have hoped. Still, you'd think the internet would explain it better? Glad one of the tries worked out!

I'm not sure I should be trusted with the knowledge of how to make decent mochi; I might never eat anything else. (which reminds me, Central Market apparently got in a large shipment and has put their usual mochi on for 25% off. Wish it were more locally made, but my addiction won't let me stop.)

It was the overconfidence that got to me. What we're doing doesn't match the recipe, but hey let's put in like half of our supply of red-bean filling before we even taste it! Good plan!
