tiny apple tasting 2

rubricity and I did not quite make it to the Cloud Mountain Harvest Festival. We did, however, stop at the big red barn with the sign reading "APPLES" that's on the way. They had three kinds of apple for 80 cents a pound and Honeycrisps for $1/pound. I didn't try any of them until I was making pie tonight, and they've been in a porous bag at room temp all week -- their texture and even flavor may be a little compromised. Still, it's an idea of what they're like.
Jonagold
A big, squat apple with dark-red streaking on a golden background. Yum! Tart and sweet in a good balance with nice appley flavor and above-average crunch.
Gala
Little red-and-yellow guy. Mild and sweet, texture too yielding.
Spartan
Green with brownish-red shading, medium-sized, pristine white flesh inside. This was interesting. The first taste was okay, kinda boring generalized apple, but while chewing I felt another flavor arise in the back of my throat, one that didn't seem like an apple flavor at all. I can't describe it well; Wim said "peppery" but it was only aromatic in a peppercorn way, not hot. It was a sort of green, pervasive... happening. I really want an apple that has this trait and a good foretaste too. Maybe I should start breeding Spartans with Honeycrisps now so I can have my dream apple when I am eighty (with false teeth?).
Pie
Composed of these three and a base coat of Granny Smith. Just out of the oven. Maybe I should wait until later to post this so I can append a review of the pie, but how could the pie be anything but delicious?
